If by key bindings you mean shortcuts then sure.

If you can't click a hand to grab or un-grab you can hit the "L" key while putting your mouse over the wrist joint to do so.

You can hover your mouse over a joint and hit the "X" Key to hold/relax a joint.

You can press Ctrl+G to bring up the game rules menu

You can press Ctrl+H to bring up the "shaders" menu

And lastly you can press Ctrl+M to bring up the Mod Folder were you can change mods.

Thanks, but what I meant was binding a whole command to one key, like binding F1 to a chat term or something like that. I wanted to bind a key to turn off blood( my brother's not allowed to play Toribash with blood enabled).
