So I've seen some cool videos on youtube of toribash where for example if the person is parkouring, and the camera is following behind them, almost like a 3rd person camera so I'm asking how to do that. Like the camera follows their back almost like your running behind them.

You can use key frames each frame your tori moves. How is to press k. Simple as that. However, do not press the key frame key a lot of times each frames, or the camera will look fucked up.

Do you also mean like toricam and ukecam? And the only thing different is that the cam isn't moving next to the tori?
