On the contrary... I've actually gotten it to work on my ipod touch. Well sorta.
First you'd need to jailbreak your iphone/ipod touch. Second, you need to install a program on both your computer and the jailbroken ipod called "VNsea." This is a nifty little program that allows you to remote control your desktop computer with your ipod VIA a local area network. Now all you have to do is remote control your desktop and open up toribash and play.*
Now the "sorta" part. The FPS is extremely horrible because it isn't yet pheasable to transfer data quick enough to produce an acceptable frame rate. Due to this, I do not recommend this technique, and thus I didn't make a tut about it.
Currently, the iphone/itouch community is working on basic emulators (nes/gba/ps1) so I can almost guarantee that genuine port to this generation of device is impossible because frankly, it wasn't built for this kind of stuff.

Did you just completely disregard what I previously posted?!?! The guy in the video is using VNsea to remote control his desktop. Did that ever cross your mind when he magically types his username / password without touching the device?
Oh theres definately an OS on it... It's called Mobile OS X that comes stock with the ipod
