idk, but i think its likely possible,
for example: a player will fight agains't the ai, the ai's objective is to protect itself and kill the player, as the ai evolve it will learn to block and then learn to attack, with more generations it will learn to read it's opponent and do chain attacks.
ofc, the evolution need to be stopped before the ai become impossible to beat.
it will also be helpful to make more realistic enemies, for example:
imagine if dark souls acually had an ecosystem where strong monsters will eat weaker monsters, the player may encounter such a thing happening anywhere, evolution simulator is a good example for that, except you play god in that game.
basicly, its not an envirement built to make challenges for the player, its simply a harsh ecosystem where the strong eats the weak and the player have to survive in it.
