Anyway, the way it's pronounced is "oo-ke" or "u-kay" depending on your accent. Translates literally as "received" or "receiver" depending on context, but in this case it is used as the name of the defender in a martial arts demonstration.
Comes from Japanese: "受け". Therefore you should pronounce it as they pronounce their syllables.
