In any case, you should be a bit more worried about your art and how easily you can make quality art for your game, as it takes the largest amount of time out of everything.
Depends on the game man, besides if you have working game and no art, it's not too hard to find someone to help.

Really you can make anything. Each genre has it's own challenges, and no matter what you do it won't turn out amazing, it will need a lot of work and polish.
If you want to start with an FPS go for it. U3 and Unity both have a lot of resources for newbies, and FPS's are popular.
