I think I'm going to go with being an imperial male or a nord male, how about you guys?

Imperial male I'd probably go with leveling both one handed and block and sneak and archery and restoration on the side.
Nord I'd go one hand and block, then probably two hand and archery on the side, with some of dat der destruction stuffs.
