Had a lot of fun getting hella killstreaks with a noobtube setup.
Was using:
SCAR-H with noob tube
Thumper
slight of hand
danger close
and comando
Highest kill streak was around 20, it only ended because the match was over. I had just started using my chopper gunner too.
Still trying for my first nuke, but getting 5 is challenging. I don't know how I'd be able to get up to 7. I need that predator to get me to harrier to get me to chopper gunner, etc.

I'm using almost EXACTLY same noobtube setup. Just that I switch the primary weapon to the one I actually want kill challenges to get unlocked ;p
About getting nuke, um. Try hard, as you get harrier you've got really high chances of nuking at harrier>choppa>nuke. Just getting harrier is annoying. Having hardline might be VERY helpful. You might think it's just one kill less, but that's a lot when you get killstreaks and all forces of nature seem to attempt killing you. Predator>Harrier>Chopper is frag getting combo :P I use it right now (prestiged lately so I don't have nuke yet).
Right now I have some nukes called and my highest killstreak is 40.
I liked the ACOG on the FAL.. just line your headshots up or you'll give yourself away.
ACOG gives outrageous recoil to most weapons. I just cannot use FAL with acog :V However holographic sight makes FAL crazily accurate, almost no recoil.
I only use knife in modern warfare 2, cause I'm trying to get in that knifing clan. If anybody on here want to start a knife only clan with me, Pm me. (Tac knife tanks)
Using knife ONLY is kinda noobish tactic, it's better to use normal spray weapon and knife A LOT. But not just knife, that's just not effective enough.
Most weapons just happen to have recoil.. I hate the ACOG on most other weapons.. I said the FAL cause the semi-auto feature makes it easier to retaliate the recoil.. When I use this setup I usually get the 'Most Headshots' award.. (to get 2 achievements at the saem time.. I love headshots.) although.. you're right, the holographic sight is probably the best in the game for the assault rifles.. it's my personal favourite.. Except for on the TAR imo.. the mars sight is way better (cudos to IW for making the red dot sight turn into the mars sight on the TAR in MP).
Edit: On another note.. Bleh I hate the knife.. I'm so used to counter-strike knifing where it takes 1 in the back, or 1 headshot.. but never just 1 chest slash...... Like I've honestly shot people in the chest 4 times and they don't even flinch but you knife someone in the foot and they die.. It's a lame system but meh.. </rant>
Edit2: What do you guys do about being on a really bad team? I was with people that were getting scores like 10 and 50.. at those points I almost wish the other team just nuked and got it over with
Sometimes I leave games, I'll admit.. some times though.. I stay because it's challenging.. I usually end up somewhere in the top 3 on my team.. if not, break even.. (especially when trying to purposely get award points that are hard to obtain).
Oh.. that uh.. infinite supply bug works, too.. it makes me not want to play though because if I'm on a bad team and every 15 seconds you hear "Enemy supply crate inbound!" it gets really irritating.. On the other hand, being on a good team and exploiting that bug is great fun.. I wish they fixed it though for real.. games are more fun when they're legit.

I think it's kind of chivalrous and "challenging" to just use knife. There's a PS3 player called "Onlyusemeblade" and he does some awesome videos. I also love his playstyle.
