Even though I'm supposed to be sneaky, the design of early dungeons and caves and stuff are forcing me to use more brutish tactics than anything

I don't think your sneak is high enough. So far every dungeon I've snuck into I was able to kill a few guys in sneak before I pull out my Axe except this one time when I was met by an Adventurer who I thought was a baddie so I tried shooting him with an arrow obviously he survived and warned me of spiders.

Not necessarily true, you have a bow. Just stay hidden and if they come your way, shoot an arrow to the opposite side so it would make noise when hitting a wall or the floor. Sure, it's easier to be a brute but sometimes it's more fun to be the silent sniper.
What kind of bonuses do Dunmer get in Skyrim? I heard the fire resistance was dropped from 75%
